Tahini pasta with sun-dried tomatoes and spinach: a quick, comforting recipe.

Ingredients:
- 300g of pasta
- 1 garlic clove
- A handful of spinach
- 100g of sun-dried tomatoes (plus 5 tablespoons of their oil)
- 3 tablespoons of Jana Mezze tahini
- Juice of half a lemon
For serving:
- Pine nuts, parmesan cheese, baby spinach leaves
Preparation:
- Cook the pasta according to the package instructions.
- Meanwhile, add the garlic, spinach, sun-dried tomatoes with their oil, lemon juice, and tahini to a blender. Blend well.
- Before draining the pasta, reserve one cup of the cooking water.
- Add the cooking water to the blender and blend once again.
- Drain the pasta and toss it well with the sauce.
For serving:
- Top with pine nuts, spinach sprouts, and a little parmesan.
