Tahini pasta with sun-dried tomatoes and spinach: a quick, comforting recipe.

Ingredients:

  • 300g of pasta 
  • 1 garlic clove 
  • A handful of spinach 
  • 100g of sun-dried tomatoes (plus 5 tablespoons of their oil) 
  • 3 tablespoons of Jana Mezze tahini 
  • Juice of half a lemon 

For serving:

  • Pine nuts, parmesan cheese, baby spinach leaves

 

Preparation:

  1. Cook the pasta according to the package instructions.    
  2. Meanwhile, add the garlic, spinach, sun-dried tomatoes with their oil, lemon juice, and tahini to a blender Blend well. 
  3. Before draining the pasta, reserve one cup of the cooking water. 
  4. Add the cooking water to the blender and blend once again. 
  5. Drain the pasta and toss it well with the sauce. 

 

For serving:

  1.  Top with pine nuts, spinach sprouts, and a little parmesan.
