Ingredients:

 

  • A handful of dates  
  • Half a pomegranate  
  • 2 carrots  
  • 2 beetroots 
  • 300g baby spinach  
  • ½ lemon  
  • 4 tbsp olive oil  
  • 1 tbsp maple syrup  
  • 1 tbsp Jana Mezze orange blossom water 

 

Preparation:

 

  1. Wash the baby spinach, peel the carrots, and grate them 
  2. Slice the beetroots into thin strips 
  3. In a large bowl, combine the spinach, grated carrots, beetroot slices, pomegranate seeds, and dates.  
  4. In a separate bowl, mix the olive oil, maple syrup, lemon juice, and Jana Mezze orange blossom water.  
  5. Pour the dressing over the salad and toss gently 
  6. Let it rest for 15 mins so the flavors fully blend together. 

 

Serve!
