Wonderfully moist, warmly spiced, and delicately enriched with tahini, this carrot cake is pure comfort in every bite.

Ingredients:
- 300g grated carrots
- 4 eggs
- 250g all-purpose flour
- 1 sachet (or 2 tsp) baking powder
- 100ml vegetable oil
- 100g brown sugar
- 1 tsp ground nutmeg
- 1 tsp ground cinnamon
- 2 tsp vanilla extract
- 2 tbsp Jana Mezze tahini
- A generous handful of crushed pecans
For the frosting:
- 150g cream cheese
- 100g powdered sugar
- 1 tbsp Jana Mezze tahini
Preparation:
- Preheat the oven to 180°C.
- Mix the eggs and sugar.
- Add the vanilla, spices, oil, and tahini Jana Mezze
- Fold in the flour and baking powder.
- Add the carrots and pecans, then mix.
- Pour into a baking tin and bake for 40 minutes.
Frosting & assembly:
- In a bowl, mix the cream cheese, powdered sugar, and tahini until smooth.
- Spread over the cooled cake and finish with a sprinkle of pecans.
