Wonderfully moist, warmly spiced, and delicately enriched with tahini, this carrot cake is pure comfort in every bite.

Servings: 6 - 8

 

Ingredients:

 

  • 300g grated carrots 
  • 4 eggs 
  • 250g all-purpose flour 
  • 1 sachet (or 2 tsp) baking powder 
  • 100ml vegetable oil 
  • 100g brown sugar 
  • 1 tsp ground nutmeg 
  • 1 tsp ground cinnamon 
  • 2 tsp vanilla extract 
  • 2 tbsp Jana Mezze tahini 
  • A generous handful of crushed pecans   

For the frosting:

  • 150g cream cheese 
  • 100g powdered sugar 
  • 1 tbsp Jana Mezze tahini 

 

Preparation:

 

  1. Preheat the oven to 180°C.
  2. Mix the eggs and sugar.  
  3. Add the vanilla, spices, oil, and tahini Jana Mezze 
  4. Fold in the flour and baking powder.  
  5. Add the carrots and pecans, then mix.  
  6. Pour into a baking tin and bake for 40 minutes.   

Frosting & assembly:

  1. In a bowl, mix the cream cheese, powdered sugar, and tahini until smooth.
  2. Spread over the cooled cake and finish with a sprinkle of pecans.
