Hearty, comforting, and full of seasonal flavor, these hummus toasts bring together roasted squash, creamy feta, and a touch of spice.

Servings: 2 toasts

 

Ingredients:

 

  • 1 small squash (potimarron / red kuri squash) 
  • 2 slices of crusty bread (from a round loaf) 
  • 50g feta cheese 
  • A handful of hazelnuts 
  • Jana Mezze hummus 
  • Jana Mezze harissa sauce 
  • Olive oil
  • Salt and pepper

 

Preparation:

 

  1. Preheat the oven to 200°C (400°F). 
  2. Slice the squash into thin wedges. 
  3. Arrange on a baking tray, drizzle with olive oil, season with salt and pepper, and roast for 20 mins until tender and slightly caramelized. 
  4. Meanwhile, toast or lightly warm the bread, then spread generously with hummus. 
  5. Top with the roasted squash, crumbled feta, and crushed hazelnuts. 
  6. Finish with a drizzle of harissa and serve immediately.
