Ingredients:
- 1 small squash (potimarron / red kuri squash)
- 2 slices of crusty bread (from a round loaf)
- 50g feta cheese
- A handful of hazelnuts
- Jana Mezze hummus
- Jana Mezze harissa sauce
- Olive oil
- Salt and pepper
Preparation:
- Preheat the oven to 200°C (400°F).
- Slice the squash into thin wedges.
- Arrange on a baking tray, drizzle with olive oil, season with salt and pepper, and roast for 20 mins until tender and slightly caramelized.
- Meanwhile, toast or lightly warm the bread, then spread generously with hummus.
- Top with the roasted squash, crumbled feta, and crushed hazelnuts.
- Finish with a drizzle of harissa and serve immediately.
